Culinary Essentials viewed the documentary "Cooked" on Netflix by Michael Pollan who explores our history of cooking via the four elements: fire, water, earth and air
Fermentation takes into account the "air" element
We've begun our experimentation with making bread the authentic way (sans yeast and using only a culture starter)
We made bread the current way (w/yeast) and will make loaves with the traditional method of adding a starter that we've been growing for the last week in the classroom.
One class is using white flour and one is using whole wheat flour.
We'll post our progress in the next week!

We highly recommend it!
