JWU Demonstration by Chef Tyler Reinhart Sweet Potato Dumplings Made with Sambolek (pickled peppers hot sauce), Chinese Five Spice (smells like Christmas and Happiness: Nutmeg, Cloves, Star Anise, Cinnamon, Ginger), Napa Cabbage, Soy Sauce, Fresh Grated Ginger, Onion, Garlic Prep Time: 20 Mins. Cook Time: 3 Mins. Yield: 3 dozen Ingredients: Sweet potato, small dice - 1 each Onion, small dice - 1 each Napa Cabbage, chopped - 2 leaves Ginger, grated - 2 Tbsp. Garlic, minced - 3 cloves Chinese Szechuan peppercorn, ground - 1/4 tsp Sambal Olek - 1/2 tsp Chinese Five Spice - 1/4-1/2 tsp. Wanton wrappers - 3 dozen Soy sauce - as needed Honey - 1 tsp Directions: 1. Boil the sweet potatoes until tender 2. Saute onions, garlic and Napa cabbage together and deglaze with soy sauce 3. Combine sauteed vegetables and spices with the sweet potatoes, mix and portion into wonton wrappers (1 tsp.) 4. Brush water on 2 edges of wanton and fold and seal into triangles. 5. Sear dumplings in saute pan for a minute or two. 6. Serve with sweet and sour sauce (recipe follows):
3 parts apple cider vinegar 1 part brown sugar ½ part honey Cornstarch to thicken Simmer above in a small saucepan until heated and thick - serve with dumplings
